Sometimes the most memorable holidays are the quiet ones. If you’re celebrating Thanksgiving solo this year—or you just want to treat yourself to something cozy and delicious—you absolutely can create a meal that feels special, intentional, and totally indulgent without going overboard. Here’s my plan for this year’s solo Thanksgiving feast.
I’m not a turkey girl (never have been!), and with beef prices sky-high this year I briefly thought I’d have to rethink my usual plan. But then I remembered one of my all-time favorite comfort foods: braised short ribs. Rich, tender, deeply flavorful, and perfect for a smaller holiday table.
This year’s menu is simple, comforting, and festive… with both a regular and keto/low-carb version of each dish so you can choose what fits your lifestyle best.
So pour yourself a cocktail, set a pretty place at the table, and make this Thanksgiving all about savoring the moment.
🍁 Start Your Solo Thanksgiving Feast With a Cocktail: Maple Bourbon Sparkler
A light, cozy sipper that feels festive without being fussy.
Regular Version:
-
1 oz bourbon
-
1–2 tsp pure maple syrup
-
Sparkling water or prosecco
-
Orange peel twist
Keto / Low-Carb Version:
-
1 oz bourbon
-
1 tsp sugar-free maple syrup (Lakanto, ChocZero, etc.)
-
Sparkling water (skip the prosecco for the lowest carbs)
-
Orange peel twist
🧀 Appetizer: Brie Toast with Cranberry-Orange Compote
A tiny bit fancy but so quick to make—and it tastes like the holidays.
Cranberry-Orange Compote (same for both versions):
Simmer ½ cup cranberries with 1 Tbsp orange juice, zest, and 1–2 Tbsp sugar or sweetener until thick.
Regular Version:
Serve warm brie on toasted baguette slices and spoon the compote on top.
Keto / Low-Carb Version:
Serve the warm brie with:
-
Keto bread
-
Almond flour crackers
-
Or just spoon the compote over a small wedge of brie—simple and delicious.
🍽 Main Dish: Red Wine Braised Short Ribs (For One!)
This is your star of the show. Short ribs are luxurious without being steak-level expensive, and braising makes them fall-off-the-bone tender.
Ingredients:
-
1–2 meaty short ribs (¾–1 lb total)
-
Salt & pepper
-
½ chopped onion
-
1 small carrot
-
1 small celery stalk
-
2–3 garlic cloves
-
½ cup red wine
-
½–¾ cup beef broth
-
Thyme + small splash balsamic vinegar
Method:
-
Season ribs generously and sear until browned.
-
Add aromatics (onion, carrot, celery, garlic).
-
Deglaze with red wine.
-
Add broth, thyme, and balsamic.
-
Cover and braise at 325°F for 2.5 hours, until fork-tender.
Finish with a pat of butter for a glossy sauce.
A good heavy Dutch oven makes all the difference when braising short ribs. If you don’t have one you love, here’s the one I use—it’s perfect for smaller batches like this.
🥬 Side: Garlic-Almond Green Beans
Bright, quick, and the perfect counterbalance to rich beef.
Regular Version:
Sauté green beans in olive oil or butter with sliced garlic.
Toss in slivered almonds at the end.
Keto / Low-Carb Version:
Exactly the same!
This dish is already keto-friendly.
A good garlic press makes this dish even faster to throw together. Here’s the one that’s lasted me for years.
🍠 Side: Maple-Chili Sweet Potato (Or a Keto Swap!)
A cozy, classic touch to round out the plate.
Regular Version:
Roast or microwave a whole sweet potato.
Split open and top with:
-
Butter
-
Drizzle of maple syrup
-
Pinch of chili flakes
-
Sea salt
Keto / Low-Carb Version:
Three options depending on how strict you want to be:
Option 1: Half a Small Sweet Potato
Still gives you those classic flavors, just with fewer carbs.
Option 2: Delicata Squash Wedges
Roast with butter and cinnamon for a sweet-potato-like vibe.
Option 3: Cauliflower Mash With Brown Butter
Creamy, satisfying, and pairs beautifully with braised beef.
🎃 Dessert: Pumpkin Cheesecake Mousse (Keto-Friendly!)
This might be my new favorite holiday dessert—creamy, festive, and done in minutes.
Base Recipe (Both Versions):
-
2 oz cream cheese, softened
-
¼ cup pumpkin purée
-
¼ cup heavy cream
-
1–2 Tbsp sugar or sweetener
-
½ tsp cinnamon
-
Dash nutmeg + vanilla
Whip everything together until thick and fluffy.
Regular Toppings:
-
Crushed gingersnap cookies
-
Maple drizzle
-
Whipped cream
Keto / Low-Carb Toppings:
-
Chopped pecans
-
Sugar-free maple drizzle
-
Keto whipped cream
✨ How to Make a Solo Thanksgiving Feel Special
This meal isn’t just about food—it’s about honoring the moment.
A few tiny touches make it feel like a celebration:
-
Use your “good” plate and cloth napkin.
-
Pour a glass of wine you actually enjoy.
-
Light one candle (or two!).
-
Turn on cozy background music.
-
Slow down—enjoy each course.
-
Write down one thing you’re grateful for this year.
Solo doesn’t have to mean simple or sad.
It can be spacious, peaceful, and incredibly nourishing.
