A Cozy Solo Thanksgiving Feast (With Keto-Friendly Options!)

Sometimes the most memorable holidays are the quiet ones. If you’re celebrating Thanksgiving solo this year—or you just want to treat yourself to something cozy and delicious—you absolutely can create a meal that feels special, intentional, and totally indulgent without going overboard. Here’s my plan for this year’s solo Thanksgiving feast.

I’m not a turkey girl (never have been!), and with beef prices sky-high this year I briefly thought I’d have to rethink my usual plan. But then I remembered one of my all-time favorite comfort foods: braised short ribs. Rich, tender, deeply flavorful, and perfect for a smaller holiday table.

Regular Version:

  • 1 oz bourbon

  • 1–2 tsp pure maple syrup

  • Sparkling water or prosecco

Keto / Low-Carb Version:

  • 1 tsp sugar-free maple syrup (Lakanto, ChocZero, etc.)

  • Sparkling water (skip the prosecco for the lowest carbs)

🧀 Appetizer: Brie Toast with Cranberry-Orange Compote

Cranberry-Orange Compote (same for both versions):

Simmer ½ cup cranberries with 1 Tbsp orange juice, zest, and 1–2 Tbsp sugar or sweetener until thick.

Regular Version:

Serve warm brie on toasted baguette slices and spoon the compote on top.

Keto / Low-Carb Version:

Serve the warm brie with:

  • Keto bread

  • Almond flour crackers

  • Or just spoon the compote over a small wedge of brie—simple and delicious.


🍽 Main Dish: Red Wine Braised Short Ribs (For One!)

Ingredients:

  • 1–2 meaty short ribs (¾–1 lb total)

  • Salt & pepper

  • ½ chopped onion

  • 1 small carrot

  • 1 small celery stalk

  • 2–3 garlic cloves

  • ½ cup red wine

  • ½–¾ cup beef broth

  • Thyme + small splash balsamic vinegar

Method:

  1. Season ribs generously and sear until browned.

  2. Add aromatics (onion, carrot, celery, garlic).

  3. Deglaze with red wine.

  4. Add broth, thyme, and balsamic.

  5. Cover and braise at 325°F for 2.5 hours, until fork-tender.

Finish with a pat of butter for a glossy sauce.
